A quick main course meal that will have children eating their broccoli. 30-40 minutes 4-6 servings Ingredients 1 lb penne rigate pasta 1 lb 1" meatballs, cooked but not in sauce 1 1/2 lbs broccoli, stems removed, cut into pieces Sauce: 4 T butter 1/2 onion, minced 2 cloves garlic, minced 3 T flour 2 c whole milk 2 c cream 1 tsp salt 1/2 tsp pepper 1 c parmesan cheese 4 oz mozzarella cheese, grated 4 oz sharp white cheddar, grated 4 T italian parsley, chopped Directions 1. Bring large pot of water to boil. Cook pasta in boiling salted water, al dente. Add broccoli to pot last 3 minutes of cooking. Drain all and return to pot. 2. Warm meatballs, according to directions. 3. Melt butter in saucepan. 4. Add onion and cook 2 minutes and then add garlic and cook 1 minute. 5. Add flour, stirring and cook 2-3 minutes. 6. Add milk and cream whisking. Add salt and pepper. 7. Cook to thicken, stirring. 8. On low heat, add all cheese and parsley and stir to melt. 9. Add meatballs and cook 2 minutes. 10. Pour over pasta and broccoli. Mix lightly.
