Ingredients 3 slices white or wheat bread 2 Tbs. Bisquick or pancake mix 1 ½ cups half and half 1 cup plus ¼ cup shredded cheddar cheese ¼ teaspoon salt ¼ teaspoon ground black or white pepper 4 large eggs 4 - 6 slices cooked and crumbled bacon Directions - Grease the bottom of a 9" pie pan with shortening or butter. Tear the bread into small pieces and press into the bottom of the pie pan. Sprinkle the Bisquick over the bread.
- In a 4-cup, microwave safe, measuring cup, heat the half and half in the microwave (high power) for 2 minutes. Remove from oven and add 1 cup cheddar cheese, salt and pepper. Return to oven and microwave another minute.
- Remove from the oven and use a fork to beat in the 4 eggs. Pour mixture into pie pan. Sprinkle the top with the bacon and remaining ¼ cup cheese.
- Place pan in oven and press "roast". Press the number 3 and then key in 15 minutes on the keypad. Press "start".
- When cooking time has elapsed, remove pan from oven and let sit 5 - 10 minutes before slicing.
Variation: Try adding ¼ cup minced onion to the half and half before microwaving and then substitute ½ cup crumbled cooked sausage for the bacon! Serve with salsa! |
