Ann's Almost Famous Easy Chicken Potpie

I came up with this deliciously easy potpie recipe years ago when I was the mom of five children under the age of seven and worked fulltime. I would make several- bake one and freeze the rest. I started giving them as gifts, and they caught on. Now almost everyone seems to have the recipe and uses it for their own families. approximately 60 minutes 6 to 8 depending on the size pieces cut Ingredients For one potpie: 1 package already prepared pie crusts 1 can cream of chicken soup 1 large can of mixed vegetables, drained cooked, diced chicken onion and pepper to taste Directions Mix the soup, vegetables, chicken, onion, and pepper in a large bowl. Pour into the bottom crust. Top with the other crust crimp edges. Bake potpie at 375 degrees for approximately one hour until crust is done. For beef potpie: Substitue cream of mushroom soup and left over roastbeef. Prepare as above. I usually make 2-4 potpies at once and freeze the others in large freezer bags. Thaw potpie and cook as stated above. These make excellent gifts for someone ill or grieving.
