Apple Pound Cake

This is a delicious moist cake. I often serve it with a scoop of ice cream and carmel topping. I took it to my church office staff while it was warm and they were hiding pieces. 50 Mintues, don't over cook 12 Ingredients 2 C. sugar 1 C. oil 4 whole eggs ¼ c. Mead or orange juice 2 tsp. vanilla extract 3 C. flour not shifted 1 T. baking powder ½ tsp. salt 2 C. chopped apples I use Gala 3 T. sugar 1 tsp. ground cinnamon Directions First, Mix cinnamon and 3 T. sugar and toss in the diced apples. Set aside until ready to pour over batter. In a kitchen aid, mix 2 cups of sugar and oil. Add eggs, orange juice and vanilla extract until well blended. Sift together flour, baking powder, and salt I used self rising so I didn’t have to do this step. Add to sugar mixture. Beat until well blended. Grease and flour bundt pan, pour ½ mixture in bottom of pan, add apple mixture, then top with rest of batter. Bake 325 degrees for 50 minutes. Allow cake to sit 10 minutes with a damp cloth over it and then un-mold. Slice into 12 pieces and serve with freshly whipped cream.
