Puerto Rican Chicken with Rice. 20 minutes under pressure 6 - 8 Ingredients 2 c. raw medium or long grain rice 1 lb. chicken parts Chicken Thighs, or mixed parts 1 8 oz. can tomato sauce 2 tbsp. Manzanilla olives 1 tsp. capers 1/2 c. sofrito available in your frozen food section 2 garlic cloves minced 1 envelope of onion soup* my secret 1/2 c. vegetable canola oil 1 envelope of sazon adobo to taste 4 c. water Directions In your Electric Pressure Cooker I use the Wolfgang Puck 5 quart Pressure Cooker brown your chicken in a small amount of olive oil while you mix the remaining ingredients. Add the remaining ingredients including the 4 c water and stir to mix well. lock the lid in place. Choose the rice setting and program the time for 20 minutes. You can allow the steam to vent naturally or if you want turn it to vent and quickly reduce the pressure. I find both methods work well. Plate and serve.
