A delicious Italian omelet suitable for breakfast, lunch, or dinner. 15 minutes 6 servings Ingredients 6 eggs 1 pound fresh asparagus 1/2 cup grated Romano cheese olive oil spray 2 tbsp. extra virgin olive oil dash of red pepper flakes Directions trim asparagus and steam until crisp beat eggs in bowl w/two tsp. water spray non stick fry pan with olive oil spray and add olive oil to pan cut asparagus in one inch pieces and add to pan with red pepper flakes pour in beaten eggs sprinkle chees on top of eggs cook until eggs are set, shaking pan intermittently using two plates slip fritata onto one plate, then place other plate on top and turn plates upside down then slip uncooked side of fritata into pan and continue to cook for about 2-3 minutes.
