a delicious hearty soup which looks like a cream soup but has no cream in it ! 2 hr.30 min. 6+ servings Ingredients chicken 4-5 lb. fryer,1c. rice,1c.fresh lemon juice,6 eggs separated ,2T. salt, Directions boil chicken ,and one onion1hr.rice in done or until meat is tender,remove from broth all chickenw/bones,now add rice cook 15 min.,turn off heat, when rice is done let cool 30 min. now using a mixer beat egg whites until frothy not stiff,add in yolks at low speed,now alternatley add in lemon juice and broth tempering the egg mixture with the broth just until the broth has brought the mix to warm temp. ,now pour broth and mix together stirring with a spoon.Remove the meat from the bones and cut or shred with your hands,serve on a separate plate or add to the soup!
