A delicious surpize that might mean just a little extra effort but well worth it. 12 minutes 4 Ingredients 1 Tb. sherry 1 Tb soy sauce 1 red pepper 4 small eggplant 2 green squash 2 yellow squash 4 cloves diced garlic 1/2 inch shredded ginger root 4 scallion white portions 4 dried red chili peppers 1 Tb Rice Wine Vinegar 1 Tsp. Sesame Oil 1/2 Tsp. sugar 1/4 Tsp. fresh ground pepper shredded mozzerella Pizza Pie Directions Preheat oven to 500 Reduce oven to 425 and bake 8 minutes then leaving in center of oven broil for 5 minutes more. Just before serving press the tomatoes with a fork to spread the sweet and tangy juices. The gravey Blend 1 Tb. sherry 1 Tb soy sauce 1 Tb Rice Wine Vinegar 1 Tsp. Sesame Oil 1/2 Tsp. sugar 1/4 Tsp. fresh ground pepper The topping Cut in 3/4inch slices and stir fry in 1/2 cup cannola oil 1 red pepper 4 small eggplant 2 green squash 2 yellow squash place on brown bag to drain and pour off remaining oil Saute 4 cloves diced garlic 1/2 inch shredded ginger root 4 scallion white portions 4 dried red chili peppers seeded and soaked in warm water saute 5 minutes and remove from heat Toss with the gravey and vegetables Cover 1 Mamma Marys Pizza Crust 8 oz shredded mozzerella 1 layer of mozzerella 1 layer of vegetable mix 6 grape tomatoes Repeat and top with more cheese Just before serving press the tomatoes with a fork to spread the hot tangy juices
