Banana Bread

A moist and delicious banana bread. 55-60 minutes 6-8 depending on how you cut the slices Ingredients 1 cup walnuts or pecans, chopped 1 3/4 cups all-purpose flour 3/4 cup granulated white sugar 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon ground cinnamon 2 large eggs, lightly beaten 1/2 cup unsalted butter, melted and cooled 3 ripe large bananas, mashed up 1 teaspoon pure vanilla extract For on top/garnish: 1 large banana, sliced or dried banana chips Directions 1. Preheat oven to 350 degrees 2. Spray the bottom and sides of a 9 x 5 x 3 inch loaf pan with non stick vegetable/flour spray. 3. Combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts in a large bowl then set aside. 4. Combine the mashed bananas, eggs, melted butter, and vanilla in a medium bowl. 5. With a rubber spatula or wooden spoon, lightly fold the wet ingredients into the dry ingredients just until combined do not over mix the batter. It should be thick and lumpy. 6. Scrape batter into prepared loaf pan and place the slices of banana on top of the batter for garnish optional. 7. Bake at 350 degrees for about 55 to 60 minutes on middle oven rack. 8. Cool on wire rack then remove bread from loaf pan & serve.
