Easier and faster to make that a traditional apple pie and every bit as delicious. 25 min 6 servings Ingredients Filling: 3 medium-sized tart apples 3 T butter Cinnamon Salt 1 T lemon juice 3 T brown sugar Batter Crust: 1 egg 3/4 c milk 1 T vegetable oil 1 c all-purpose flour 1 1/2 t baking powder 1/4 t salt 1/2 T sugar 1 T vanilla Directions For filling: Peel, core, quarter, and slice apples. Place butter in an 8-inch, oven-safe skillet over medium heat. When butter has melted, add apples to the skillet and dust generously with cinnamon and add lemon juice. Cook slowly until apples start to lose their shape. Add the brown sugar and cook a few minutes longer until the apples beging to caramelize. Remove from heat and leave the apples in the skillet. For the crust: While apples finish cooking, heat oven to 400 degrees. Put egg, milk, vegetable oil and vanilla in a bowl and beat to combine thoroughly. Add flour, baking powder, salt, and sugar on top of egg mixture. Gently toss dry ingredients with your fingers to combine. Using a whisk, beat thoroughly into a smooth batter. Pour over the hot apples and place in preheated oven. Bake for about 20 minutes or until batter is puffed and brown. Serving suggestions: Serve with ice cream and/or whipped cream and/or drizzled with caramel ice cream topping or even maple syrup.
