Easiest ever French onion soup. 15 minutes 2 servings Ingredients 2 cups diced onions use several varieties but at least 1 cup must be sweet ones 1 T olive oil 15-16 oz can beef broth 1T burgandy wine Croutons--enough to cover bottom of 2 soup mugs--garlic cheese flavor is best 2 deli slices of low fat Swiss cheese Directions Preheat wok pan on low heat. Add olive oil and onions. Cook slowly to carmelize onions-about 6 min. Before they brown too much transfer to the steamer pan-set aside on something to catch drippings. Put broth in wok, add steamer containing onions and cook on simmer for about 7 minutes. While simmering soup put seasoned croutons in microwave proof bowls or mugs and place cheese on top of them. Heat in microwave on high about 2 minutes--or till you see cheese begin to melt. Add burgandy wine and onions from the steamer to the wok. Heat about a minute and ladle into the mugs.
