Brocolli Salad

A delicious healthy snack. Makes a wonderful side dish. Easy to prepare and no cooking involved. Kids will eat there vegetables and ask for more. none 4 1 cup servings Ingredients 4 heads of broccoli crowns are best, less waste 2 packages of good seasons Italian dressing.The kind you mix yourself 1/4 cup of good fresh grated Parmesan cheese. Directions Rinse the broccoli. Break broccoli flowerets off of the head of the broccoli in bite sized pieces. usually just by pulling the stems fill a plastic bowl with a tight fitting lid 3/4 full of the broccoli flowerets. Sprinkle 1/4 cup of freshly grated Parmesan cheese over the top of the broccoli in the bowl.Mix the Good Seasons Italian Dressing mix according to the box. I use only white vinegar and vegetable or canola oil. Shake the salad dressing up and mix well and then pour over the broccoli and cheese mixture. Do this with two packages of the salad dressing mixture. Put the lid on the bowl and shake the dressing around the pieces of broccoli. Let sit in the refrigerator for at least 3 hours. Preferably over night. on occasion if going into the fridge take out the bowl and shake up the broccoli again. When ready to serve put in a pretty glass bowl with some tongs. Or serve in little bowls like you would a salad. Enoy
