Cheddar Apple & Cashew Muffins

You won’t be able to stop at just one of these cute little muffins. The creamy & buttery flavors of cheddar and cashews go perfect with apple. 14 minutes 18 mini-muffins Ingredients 1 cup all purpose flour ½ cup granulated sugar 1 teaspoon baking powder ½ teaspoon ground cinnamon ¼ teaspoon ground nutmeg ¼ teaspoon salt ¼ cup shredded sharp cheddar cheese 1 large egg 1/3 cup whole milk 3 tablespoon vegetable oil 1 teaspoons vanilla extract 1 cups granny smith apples, peeled, cored & small chopped 4 tablespoons cashews, chopped small Directions Preheat oven to 375 degrees. Line a 12 mini-muffin tin with paper liners In a large mixing bowl, mix together the flour, sugar, powder, cinnamon, nutmeg, salt, and cheese. Make a hole in the center of the bowl set aside. In a medium mixing bowl, whisk together the eggs, milk, oil and extract. Pour the wet mixture into the hole in the center of the dry mix. Mix until ingredients are just wet. Fold in the apples and cashews. Fill each muffin tin ¾ full of batter. Bake at 375 degrees for 12-14 minutes or until a toothpick inserted in the center comes out clean. Repeat with the remaining batter.
