Cheesey Seafood Bisque

This recipe was inspired by my mom who taught me to cook and has always told me that a recipe is only as good as what I can Imagine. 20 min 6-8 servings Ingredients 2 Tbsp Olive oil 1 Large Onion chopped small dice 1 Large bell pepper chopped small dice 4 stalks celery chopped small dice 2 large pieces of roasted red pepper chopped small dice 1 8oz container of select crab meat 1 8oz package of frozen salad shrimp 1 16 oz package of peeled crawfish tails 1 qt chicken stock 4 cap full of liquid crab boil 2 quarts heavy whipping cream 1 2 lb block of Velveeta cheese 1 12 oz package of shredded mild cheddar cheese Dash cayenne pepper ½ cup of chopped green onions garnish Directions In a large sauce pan sauté chopped onions, bell pepper, celery and roasted pepper till translucent add crabmeat, shrimp, and crawfish and simmer for 4 to 5 minutes on med heat. Now add chicken stock, liquid crab boil, heavy whipping cream and bring to a soft boil now add Velveeta and mild cheddar cheese stir till melted add a dash of cayenne and continue to simmer for about 15 minutes on med low heat to allow flavors to blend. Garnish each serving with green onions. Serve with French bread
