Spinach Two Ways
To Fry
Ingredients
¼ pound fresh spinach
1 quart peanut oil
Kosher salt and cracked black pepper to taste
Preparation:
  1. Heat peanut oil in a sauce pan to 350 degrees.
  2. Place spinach in a strainer, colander, or fry basket, and set in oil. Be careful; the spinach will pop loudly from the water in the greens. Fry for about 30 seconds, pull out of fryer, and place on a dry paper towel.
  3. Season with salt and pepper. Spinach should be crispy and very light.
  4. Serve immediately.
To Sauté
Ingredients
¼ pound fresh spinach
1 tablespoon butter, unsalted
1 tablespoon olive oil
6 garlic cloves
Kosher salt and cracked black pepper to taste
Preparation:
  1. Heat oil in a sauté pan on high to just smoking.
  2. Add spinach, garlic, and butter. Quickly toss the spinach continuously until all spinach is wilted.
  3. Season with salt and pepper.
  4. Serve immediately.
