CHICKEN & ASPARAGUS STIR-FRY
Serves 4
Ingredients
2 tablespoons sesame oil
2 garlic cloves, minced
2 cups asparagus, cut into 1 1/2-inch pieces
2 cups small broccoli florets
1/4 cup chicken broth
1 pound boneless chicken breasts, thinly sliced
2 green onions, chopped
3 tablespoons hoisin sauce
1 tablespoon oyster sauce
Directions
  1. Heat 1 tablespoon of sesame oil in large nonstick skillet or stir-fry pan over medium-high heat.
  2. Add the garlic and stir 30 seconds.
  3. Add the asparagus, broccoli and chicken broth.
  4. Cover and cook until vegetables are crisp-tender, about 3 minutes. Transfer vegetables to a bowl.
  5. Add the remaining 1 tablespoon of sesame oil to the skillet.
  6. Add the chicken and green onions to the skillet.
  7. Stir-fry until the chicken is just cooked through, about 3 minutes.
  8. Mix in the hoisin sauce, oyster sauce and vegetables.
  9. Toss until heated through and sauce coats evenly, about 1 minute.
