Fresh Orange Peel covered in lucious chocolate perfect for that special sweet table or a wonderful gift combined with a new candy dish! This was originally a dessert for Passover but it has transcended that culture and everone who tries it becomes addicted to the fresh taste of orange and the richness of the chocolate.

Ingredients
4 Large Navel Oranges
1/2 cup Granulated Sugar
12 oz. Chocolate - You should use the best chocolate you can afford and the flavor you desire dark semi-sweet or milk chocolate works best and you can also use white chocolate by itself or as a garnishment to the dark chocolate

Directions
1. Prepare several cookie sheets line them with wax paper or plastic wrap.
2. Peel the oranges very carefully. You should be able to cut at least 30 narrow strips of orange peel from each orange. Trim the white pith as much as possible.
3. Place the orange strips in a pot. Cover with cold water and bring to a boil. When the water comes to a boil, strain the water from the pot.You will repeat this step 3 more times, but each time, the amount of time it takes for the water to come to a boil will be shorter.
4. Repeat step 3.

7. Add the granulated sugar to the orange peel cover with cold water and bring to a boil. When the water comes to a boil strain the water from the pot.
8. Place the drained orange peel into a pan and spread out. Place the orange peel in the refrigerator to cool completely.
9. Prepare the chocolate to be melted. Break up the chocolate and place in the Food Processor. Pulse several times until the chocolate is medium coarse.
10. There are 3 different methods you can use to melt the chocolate.
Method 1. Use a double boiler to melt the chocolate.
Method 2. Use a large bowl filled with hot water. PLace a
smaller bowl above this bowl to melt the
chocolate.
Method 3. Use a microwave proof bowl to melt the chocolate
in the microwave. Heat the chocolate in 15 second
intervals until the chocolate is melted.

Now the fun part!
11. Using tongs, dip the orange peel, one piece at a time into the melted chocolate. Place the dipped fruit slice onto the wax paper lined cookie sheet.
12. When the cookie sheet is full place it in the refrigerator.
13. Keep the chocolate covered orange peel in the refrigerator until serving time. Shelf life in the refrigerator is approximately 4 days if it lasts that long!
