Crab Albondigas Soup

A seafood version of the usually meat-based soup popular in Mexican restaurants 30 minutes 4 Ingredients 1 package Great Gourmet Maryland Style 2# Crab Cake Ball Appetizers 4 cups chicken broth ½ cup frozen corn kernels ½ cup finely diced, seeded Roma tomatoes 2 tablespoons chopped green onion ½ poblano chili pepper, seeded and finely chopped 1 teaspoon ground cumin Salt and pepper to taste 4 teaspoons finely chopped fresh cilantro 1 lime, cut into quarters Tortilla chips Directions Bake Great Gourmet Maryland Style Crab Cake Ball Appetizers according to package directions until lightly browned. Combine chicken broth, corn, tomatoes, onion, pepper, and cumin in large saucepan, and bring to a boil over medium high heat. Season with salt and pepper to taste, and simmer 5 minutes. Add the crab cake balls, and continue to cook over low heat for another 5 minutes. Ladle into bowls and sprinkle each with a teaspoon of cilantro. Serve with lime wedges and tortilla chips.
