Cream of Potato and Tomato Soup

A warm and tasty creamy soup to enjoy whether its cold weather or you just want to eat light. 45 minutes 4 - 6 servings Ingredients 4 medium chopped potatoes, 1 large chopped onion, 1 pint canned tomatoes, 2 cups milk, 3 TBSP plain flour, 1 TBSP sugar, 1 tsp salt, 4 TBSP butter or margarine Directions Chop onion in immersion blender. Cut potatoes in cubes. Cook potatoes and onions in small amt of water til tender. Add tomatoes and stir well. Cook 10 min. Mix milk, flour, sugar, and salt. Add to potato mixture. Bring just to a boil. Turn down to low and simmer. Just before serving add the butter.
