Crusted Top Salmon

Baked Salmon with Scallop Stuffing Toping 35 minutes 4 servings Ingredients 1 lb Medium Sea Scallops 1 lb Salmon Fillet 1/4 tsp Garlic Pepper 1/4 tsp Sea Salt 1/4 seafood Seasoning 3 tbs Unsalted Butter 3 tbs Vegetable Oil 1/2 cup Olive Oil 2 tbs Lemon Juice 2 tbs Lemon Zest for Garnish 1 6oz Box of Cornbread Stuffing with Herb Seasoning Directions 1. Preheat oven 375deg 2. Saute scallops with vegetable oil and 1tbs of butter 3. Mix cornbread stuffing according to directions 4. Chop scallops and combine in stuffing and set aside 5. Place salmon in a well oiled baking dish 6. Add lemon juice and sprinkle fish with garlic pepper,sea salt and seafood seasoning 7. Pour 2 tbs of melted butter and olive oil over the fish 8. Bake uncovered for 25 minutes 9. Place the scallop stuffing over the fillet for last 10 minutes 10. Garnish with lemon zest around the fish 11. Serve warm on a serving plate
