CURRY SHRIMP AND MANGO
Aromatic, flavorful and sweet shrimp skillet dinner. Family favorite for everyday or entertaining. 25-30 MINUTES 6-8 Ingredients CURRY SHRIMP AND MANGO 2 tbspn.Vegetable oil 6 chopped scallions 2 tbspn minced fresh ginger 2 cloves garlic, minced 2 tbspns curry powder ½ tpsn salt optional: 1/8 tpspn cayenne pepper 1 cup water ½ cup dry white wine or coconut milk 2 sweet potatoes, peeled and diced * shrimp substitution: chicken tenders 1-2 lbs shrimp 2 large 2 cupsjust underripe mangoes fresh chopped cilantro lime or lemon wedges. Directions CURRY SHRIMP AND MANGO Heat 2 tablespoons vegetable oil in skillet add 6 chopped scallions 2 tbspn minced fresh ginger 2 cloves garlic, minced cook 2 minutes add 2 tbspns curry powder ½ tpsn salt optional: 1/8 tpspn cayenne pepper cook 2 more minutes add 1 cup water ½ cup dry white wine or coconut milk 2 sweet potatoes, peeled and diced cover and cook 15 minutes * shrimp substitution: chicken tenders add 1-2 lbs shrimp 2 large 2 cupsjust underripe mangoes cover, cook 5 minutes Top with fresh chopped cilantro and lime wedges. Serve with Indian style flat bread.
