Drunken Fish Tacos

Our favorite cocktail - margaritas - is the basis for the marinade of this fabulous dish. And the best part - you have the ingredients on hand to make a big pitcher of margaritas. Also, though the fish needs to marinate for at least 2 hours, they are a snap to prepare. This recipe can easily be doubled or tripled to serve a crowd.

Ingredients
¼ C. – fresh lime juice
¼ C. – tequila
2 Tbsp. – triple sec
2 cloves garlic, peeled and smashed
1 1/2 Tbsp. - hot sauce
2 tsp. – salt, divided
1 ½ lbs. – fish filets, skinned and de-boned any white meat fish will work, but we enjoy albacore tuna or mahi mahi
1 tsp. – black pepper
1 tsp. – chili powder
1 Tbsp. – olive oil
1 Tbsp. – butter
Oil for deep frying
8 corn tortillas
Salt & pepper to taste

Accompaniments: Refried beans, shredded cheese, guacamole, salsa, sour cream, chopped tomatoes, chopped fresh cilantro


Directions
Add the lime juice, tequila, triple sec, garlic, hot sauce, and 1 teaspoon of salt to a food processor. Pulse until pureed and well-combined. Add to a large re-sealable plastic bag.

Cut the fish fillets into 2-inch chunks. Add to the plastic bag with the tequila mixture and marinate for 2 hours.

Remove fish from marinade and pat dry. Place in a bowl along with remaining 1 teaspoon of salt, the pepper and chili powder. Toss well to coat fish with seasoning.

In a large skillet, add the olive oil and butter and bring to medium heat. Once butter is melted and bubbly, add the fish. Cook, stirring often, for 5-8 minutes, until fish is cooked through and is lightly browned. Remove from skillet and coarsely chop the fish. Keep warm until ready to serve.

To make the tortilla shells, heat the oil until it reaches 350 degrees. Add the tortillas, one at a time, for 1-2 minutes per tortilla, until lightly golden. Remove and let drain on a paper towel-lined baking sheet. Sprinkle with salt & pepper. Repeat with remaining tortillas.

Serve tacos buffet style, letting guests dress their tacos as they like. Lay the tortillas, chopped fish, and desired accompaniments along table and enjoy.
