It''s cast iron, never use soap. That will unseason it. Put water in it after you take the food out while it''s still hot. It will clean up much easier.

If you are going to purchase cast iron pieces, which have extraordinary taste and durability benefits, you must understand how to treat them. The advantage to Emeril''s cast iron products is that they come pre-treated! Therefore, you need only remember to wipe them clean with a soapy cloth after each use and then dry, but do not soak them. These are iron; they will rust if you soak them.

This is the worst investment in cookware I ever made. It is very heavy, okay, so it''s cast iron. You have to expect that. Then I cooked meat in it and the meat came out great! The problem is with the clean up. This is impossible to clean and, after soaking overnight, it started to look like it was rusting. So disappointed, I am sending it back...
