The word santoku means "three good things," a reference to the three cutting tasks it performs: slicing, dicing and mincing. The hollow accents on the edge of the blade create air pockets between the blade and the food, reducing surface tension. This in turn prevents foods like salmon or ham from sticking to the blade and allows for finer, paper-thin slices. Each high-carbon, rust-resistant knife features ergonomic handles designed to fit the hand comfortably and is stamped with a silvertone Wüsthof Trident logo.
