Fabulous Fudge Sauce
Ingredients
1- 1/4 c. sugar
5 T. cocoa powder
Dash salt
1 c. evaporated milk
2 t. vanilla extract
3 T. butter


Directions
  1. Measure sugar, cocoa powder and salt into rice cooker pot, and stir together. Add evaporated milk and vanilla and stir mixture thoroughly to blend ingredients. Cut the butter into small bits, and drop on top of mixture. Close rice cooker, and switch to 'cook'. After about 10 or 11 minutes, cooker will automatically switch to 'keep warm'. Open rice cooker and stir mixture to check for desired thickness. If sauce isn't as thick as you'd like, close rice cooker and switch to 'cook'. Cooker will usually automatically switch back to 'keep warm' within a minute or two, when you can check the sauce again. This makes about 1- 1/2 cups of hot fudge sauce.

  2. This makes a fabulous hot fudge sauce to spoon over ice cream, and I've also used it as a ganache/frosting - pouring it straight from the rice cooker over cake. I now keep a container of this sauce in my frig all the time. And, one of the lovely things about doing this in the rice cooker is that the sauce doesn't splatter all over you and everything else...and there are no little splatter burns on your hands as there would be if you were stirring this on the stove...
