| | | FRESH FRUIT GRATIN Serves 6-8 Ingredients 4 tablespoons unsalted butter 6 tablespoons granulated sugar 3 peaches, peeled, pitted and quartered 3 nectarines, peeled, pitted and quartered (or 1 pound fresh cherries, stemmed and pitted) 2 large eggs 1/3 cup milk 1/3 cup all-purpose flour 3 tablespoons honey Pinch of sea salt 1/3 cup sliced almonds Directions Preheat the oven to 425°F. Grease a 9-inch pie dish with two tablespoons of the butter, and then sprinkle 2 tablespoons of the sugar to coat the pan. Place all of the fruit, cut side down, into the pie dish. In a bowl, whisk together the egg, milk, flour and salt until there are no lumps. Pour the batter evenly over the fruit. In a small bowl, combine the remaining 4 tablespoons of sugar with the almonds. Sprinkle the mixture evenly over the fruit. Cut the remaining 2 tablespoons of butter into small pieces and dot the top of the batter with the butter. Drizzle the honey all over the top of the Gratin. Bake until the topping is crisp, and the batter has puffed and cooked through, about 15 minutes. Serve warm. |
