Healthy happy but tasty way to eat your veggies 25-30 minutes 6 servings Ingredients 1 prebaked pie crust store bought or homemade sliced fresh peeled tomatoes to fill crust 1 cup mayonaise 1 cup grated cheddar cheese 1 cup grated mozarella cheese fresh basil corsely chopped about 1/8 cup fresh green onion corsely chopped about 1/4 cup salt and pepper to taste Directions Layer fresh sliced peeled tomatoes in colander lightly salting each layer as you go. Let stand to drain in the sink for 30 minutes or so. Meanwhile, chop green onion and basil. Mix mayonaise, cheeses, salt and pepper to taste. Remember that the tomatoes are pre-salted. Place drained tomatoes in precooked crust. Cover with chopped green onions. Sprinkle evenly with chopped fresh basil. Top with mayonaise/cheese mixture. Bake 350 degrees intil browned and warmed through. Serve warm.
