Grilled Beet and Blood Orange Salad

This is a very flavorful salad with unique ingredients. Perfect for the family or to impress guests. 30 4 Ingredients 3 medium beets, cut into slices/rounds ¼ cup olive oil 2 blood oranges, peeled and cut into individual segments 5 cups mixed baby greens 1/2 cup lightly toasted macadamia nuts, chopped Oil for brushing Foil for grilling Dressing: 1/3 cup orange juice 1 teaspoon cinnamon 1 tablespoon brown sugar 2 tablespoons mayonnaise 1 tablespoon orange rind Directions 1. In a medium bowl, mix beets with olive oil and allow to marinate at least 30 minutes. 2. Preheat an outdoor grill for high heat, and lightly oil the grill grate. 3. Place the beets and oil on a piece of foil and seal tightly. Place the foil on prepared grill, and cook 25 minutes. Remove beets from foil, place directly on the grill and cook 2-5 minutes. 4. While beets are cooking on the grill, brush orange segments with oil and place on the grill grate Cook 1 minute on each side. 5. Meanwhile, in a small bowl, whisk together dressing ingredients Set aside. 6. Place mixed greens in a large salad bowl. Add beets, blood oranges, and macadamia nuts. Toss with the dressing and serve immediately.
