Harvest Meatloaf

Classic meatloaf with a healty twist. Tender Turkey and sausage meatloaf filled with harvest fruits and vegetables and buttery chopped nuts. 1 hour 6 servings per Loaf Ingredients 2 lb Ground Turkey 1 lb Lean Ground Beef 1/2 lb Sweet Mild Italian Sausage Red/gold/Orange Bell Peppers - 1/2 cup each Shallots - 4 Garlic - 2 cloves Zucchini - 1 small Almonds - 1/2 cup Pecans - 1/2 cup Dried Cranberries - 1/4 cup 3 Eggs 1 cup Marinara Sauce 1 package of Stovetop Dressing Directions Mix ground turkey, beef and sausage together in large mixing bowl. In food processor, mince peppers, shallots, garlic and zuchinni together. Add vegetables to meet mixture and mix well. In food processor, pulse nuts until they form a fine meal consistency and add to meat mixture. Stir in dried cranberries. Beat eggs until light yellow. Add eggs and 1/2 cup marinara to meat mixture and mix well. Add stuffing mix - 1/2 cup at a time until well incorporated. may not need all the stuffing mix - just enough to bind the mixture together. Form two loaves from the meat and place in oiled loaf pans. Bake at 350 degrees for 1 hour. Take out and let sit for 15 minutes. Coat top of each loaf with remaining marinara sauce.
