baked coconut mochi 1hr 24 pieces Ingredients 1lb rice flour mochiko 2-1/2 cups sugar organic raw cane sugar 1tsp baking powder 3 cups coconut milk 5 eggs 1tsp vanilla 1 cup fine dried coconut organic 1/2 cup cooled melted butter Directions beat eggs well add sugar beat add dry ingredient alternating with wet beat pour into 9x13 pan lined with parchment paper bake in pre-heated 350 degree oven 1 hour when toothpick comes clean in middle...done cool cut into 24 pieces when cooled, refridgerate
