A heart healthy pasta dish that is actually flavorful. It uses fresh vegetables and healthy fats. This was created for a low cholesterol diet. 20 minutes 6 servings Ingredients 12 oz. whole wheat noodles, any type 4 tbsp. extra virgin olive oil 2 tbsp. + 2 tbsp. 3 tsp. sea salt 2 tsp. + 1 tsp. ½ tsp. black pepper 1 boneless, skinless chicken breast, chopped ½ green bell pepper, diced optional 1 garlic clove, diced ¼ medium onion, diced 1 c. sliced mushrooms 1 ½ c. peeled deveined shrimp ¼ lemon 2 tbsp. pine nuts optional 1 tomato, diced 1 c. baby spinach leaves optional Directions Heat two tablespoons of the olive oil in a medium pan on medium heat. Add chicken, bell pepper, onion, garlic, pepper and one teaspoon of the salt. Stir often. When the chicken is done reduce the heat to low and add mushrooms and shrimp. Continue stirring often. When the shrimp turns pink toss in the pine nuts and tomatoes. Squeeze the lemon over and stir. Remove from heat and set aside. Cook the noodles to their directions adding two teaspoons of salt. When they are done, drain and add two tablespoons of olive oil. Combine everything, stir and serve topped with your favorite shredded cheese.
