Braised parsnips and tart apples, finished with toasted, slivered almonds 20 minutes 4 servings Ingredients 4 medium parsnips 2 tart apples 2 tbls butter 1 1/2 cup of water nutmeg salt white pepper, pinch of sugar handful of toasted, slivered almonds Directions Peel parnips and cut into 1/2 inch diagonal chuncks Peel apples,core and put into chuncks Heat butter in saucepan Add parsnips, let fry a bit Add apple, keep stirring to release juice withour burning apple or parsnip. Add water,in half cup increments. Cover saucempan. Lower heat. Check often. Add more water, as required. Add salt, pepper, nutmeg, pinch of sugar. Dish is done when parsnips are just fork tender. Apples will be soft and cooked down 10 minutes In the meantime, toast slivered almonds on baking sheet in 350 degree oven. Spoon veggies into serving bowl and sprinkle with toasted almonds.
