Humingbird Cake

A delicious homemade cake good for all occasions 1 hour 20 minutes 12 Ingredients 2 c. sugar 3 c. flour 1 tsp. soda 1/2 tsp. salt 1 tsp cinnamon 2 dashes of nutmeg 2 c. mashed ripe bananas 3-4 large 3/4 c. oil 3 eggs, slightly beaten 8 oz. can of crushed pineapple, undrained 1 c. chopped pecans 1 c. shredded coconut 1 tsp. vanilla Directions Cake: Mix sugar, flour, soda, salt, cinnamon & nutmeg together in a large bowl. Blend in the following by hand: oil, eggs, pineapple, pecans, vanilla, bananas and coconut. Bake in tube pan for 1 hr. & 20 minutes at 325-350 degrees. Place foil over top of cake during the last 20 minutes so cake won't crack. OR, if you prefer, bake in a 9 x 13 cake pan for 35-40 minutes @ 325-350 degrees. Icing: Blend 3 oz. of light cream cheese with 2 Tbsp. of melted butter until light. Gradually mix in 2 -2 1/2 cups of powdered sugar to taste and just enough milk to make it spreadable start with 1 Tbsp.
