homemade individual roundbreads or rolls 6 inches
fresh spinach, pesto sauce, mozzarella/fontina shreds
artichoke hearts, sliced red onions, pitted kalamata olives
feta cheese
sliced tomatoes 3 minutes 1 or 20 Ingredients Per serving: 3 thin slices roma tomato,3 thin rings red onion,4-5 sliced pitted kalmata olives, 2 tb pesto sauce, 1/2c mozzarella/fontina shreds,handful fresh spinach, 2 sliced artichoke heartspacked in water 1/4 c crumbled feta, 6 inch ciabatta rolls, or italian bread round. Directions slice bread in half, spread pesto and 1/2 the mozzarella/fontina on one half, and pesto only on other half. On the Mozz half layer: tomatoes, olives, artichokes, onions,finish with spinach and top with feta and rest of cheeses. Cover with other half of bread and grill for 3 minutes. Cheeses will be melted but spinach will still be fresh. Of course if you bake your own little breads it will be better. This is so deeeeelicious and healthy, too.
