Jamaican Rum Black Fruit Cake

A Jamaican Christmas tradition. It will leave you asking for more! 2 hrs steaming time 12 servings Ingredients 8 ounces butter 8 ounces sugar preferably dark 10 Large eggs 1 lb fruits raisins, prunes, currants, cherries 6 ounces flour 6 ounces plain bread crumbs 1 tsp baking powder 1/4 tsp salt 1 tbsp mixed spice 2 tsp vanilla 1 tbsp browning caramel 1 cup Jamaican white overproof rum 1/2 cup port wine 1 tsp lime or orange rind optional Directions Pre-heat oven 300 degrees Full broiler pan with water and place on bottom rack of oven 1. Prepare baking tin by lining inside with wax paper 2. Grease with butter 3. Cream butter and sugar until light and fluffy 4. Add eggs one at a time beating well after each addition 5 Mix breadcrumbs, baking powder, flour, salt and mixed spice together and add into batter. 6. Add browning and beat until color is even should be a light brown shade 7. Add rum and port wine and beat well 8. Pour batter into baking pan and steam in oven at 300 degrees F, for 1 hour and then lower to 250 degrees for an additional hour. Place water in broiler pan on bottom rack of oven
