Madeleine cookies. A great "happy friday" treat for co-workers. Packaged in cellophane bags with cute ribbon & note cards. 10-14 minutes About 3 dozen cookies Ingredients 4 eggs 1/4 tsp salt 2/3 cup sugar 1 tsp vanilla extract 1 cup sifted all-purpouse flour 4 oz. melted, cooled un-salted butter Directions 1. Heat oven to 375 degrees. 2. Spray w/ non-stick cooking spray or butter and flour madeleine pan specialty pan, but could use a mini muffin pan as a substitute. The butter and flour used here are in addition to what the recipe calls for. 3. Beat the eggs, salt & sugar together in mixer, about 8 minutes. 4. Add the vanilla. 5. Fold in the flour. 6. Fold in the butter. 7. Spoon or use pastry bag to transfer mixture into madeleine or mini muffin pan. 8. Bake 10-14 minutes until edges are golden. 9. Remove cookies from pan & place on wire rack to cool, then serve.
