Meatless Stuffed Peppers

Every once in awhile we like to redo an old favorite. So this is an old favorite lightened-up.

Ingredients
6 green peppers
2 cups rice
12 oz. baby portobella mushrooms medium dice
1 qt. Wolfgang Puck Beef stock
1 medium onion diced

Directions


1. Add rice and beef broth to rice cooker and start
2. Saute onion and mushrooms
3. Slice tops off of the peppers
4. When rice is finished add to mushrooms and onions, then stuff peppers and put in a 350 degree oven for 1hour. Or until peppers are tender.
