You will get a burst of fresh flavors the minute you bite into these panini's. The panini's are excellent all year. Truly unique and wonderful! This pork can also be made ahead of time and then the sandwich can be assembled & grilled anytime your ready to serve. Recipe can easily be doubled! 60 minutes 5 sandwiches Ingredients 2 Large Oranges, zested & juiced 1 ½ Pounds Boneless Pork Ribs 2 TBSP Bouquet Garni, in a bag or tea ball 5 – 6 Cups Water ½ Cup Chopped Fresh Basil ½ Cup Chopped Fresh Parsley ½ tsp Garlic Powder 1 TBSP Green Pepper Sauce ½ tsp Salt 3 TBSP Chopped Toasted Pecans 3 TBSP Shredded Romano Cheese ¼ Cup Extra Virgin Olive Oil Olive Oil Spray 10 thinly sliced pieces Sour Dough Bread 10 thin slices of Small Tomatoes 5 Slices Smoke Provolone Cheese Directions 1. With a micro-grater, zest the two large oranges. Measure out 1 ½ teaspoons of zest and set aside, with the remaining zest place in a small bowl. Squeeze the juice into the same bowl that has the zest. 2. In the Wolfgang Puck Bistro 4 quart Covered Saucepan W/ Pour Spouts, add the bowl of juice/zest, ribs and the bouquet garni. Add just enough water to cover the tops of the ribs. Over high heat bring to a boil. Reduce heat to a slow simmer, cover pan with lid and cook the pork until fork tender, about 50-60 minutes. While the pork is cooking, in the Cuisinart Mini Prep Food Processor add the basil, parsley, garlic, green pepper sauce, salt, pecans, cheese, oil and the 1 ½ teaspoons orange zest. Mix until well blended. Set a side. 3. When the pork is done cooking, drain the water from the saucepan. Take the ribs out of the pan and place on a platter. Let cool for 10 minutes then shred into coarse flakes. In a medium bowl, add the pork with the pesto, combine together. Preheat the Panini Grill. 4. Assembly of Panini’s: Lightly spray one side only of all 10 pieces of bread. This will be the side that gets toasted. Line up the bread, assembly style and on 5 slices of bread, add 2 slices of tomato and evenly divide the pork mixture on top of the tomato. Lay a slice of cheese on top of the pork and top that with the remaining bread. Oil side facing out! Toast in the Wolfgang Puck Panini Grill 2-4 minutes or until golden brown. Serve warm.
