Pasta with ricotta sauce

Hearty yet lean Italian country dish 20 mins 6 Ingredients 2 C. Part skim milk ricotta 1/2 grated parmegiano cheese salt to taste freshly ground pepper 1 lbs of cooked linguini 3/4 C. of hot pasta water 1/2 C. Chopped fresh parsely 1/2 stick of butter optionaladd with hot water Directions Boil Linguini according to directions. While past is boiling grab a bowl place you ricotta in it and break it up with a large spoon. Ladle some hot pasta water from the boilig pasta pan incorperate it into the ricotta. Mix to desired consistency season, add parmegiano, and parsely. Drain the pasta and add it to the ricotta sauce. Serve with grated parmegiano and Coarsly ground black pepper.
