An invigoratingly sweet ice cream made from fresh, ripe peaches and Iced Riesling. Since we bottle our own Iced Riesling, we can enjoy this sumptuous treat any time of the year. 30 to 45 minutes Makes ten 1/2 cup servings Ingredients 6 to 8 small fresh, ripe peaches Bottle of Iced Riesling 3/4 cups sugar 1 cup heavy cream 1 TB. fresh grated lemon peel Directions 1. Combine the Iced Riesling and sugar in a medium saucepan and simmer until the sugar has dissolved. 2. Add peaches to the saucepan in a single layer. Cook slowly, turning peaches to cook evenly, until the peaches are tender but not soft. Remove from heat and cool in liquid at room temperature. 3. When the peaches are cool enough to handle, peel the skin from the peaches, cut in half and remove the pit. 4. Place the peaches in a blender and add enough cooking liquid to make three cups. Puree until smooth. 5. In a mixing bowl, combine puree, lemon peel and heavy cream. Cover and chill for two hours. 6. Poor contents of mixing bowl into ice cream machine and follow manufacturer’s directions for a soft ice cream.
