A wonderful dish for company or anytime. It is quick, easy and elegant. 35 minutes 6 to 8 servings Ingredients 1 lb. box of penne pasta 1 16 oz. container of heavy cream or whipping cream, you can use light cream, too 1/2 cup vodka 3/4 cup parmesan cheese 1 can of crushed tomatoes 1 lb. 12 oz. can 1/4 to 1/2 tsp. crushed red pepper seeds pinch of salt and 1/8 tsp. fresh ground pepper 2 cloves of garlic, minced 1 stick salted butter 6 leaves of fresh basil, julianned for garnish Directions 1. Cook the penne pasta, according to the package 2. Melt the butter in the 12" casserole or whatever pot you like, should be a medium size one 3. Pour the vodka in and bring to a boil for 6 minutes, until the alcohol cooks off. Be careful this will bubble up, put a lid on it halfway. I do not put the lid on, I just watch the pot 4. Add the tomatoes, salt, peppers, and garlic, stir and cook 15 to 20 minutes 5. Add the cream and parmesan cheese, stir, cook 8 minutes, keep this on low, and stir often 6. Add the cooked penne pasta, stir, until well coated, garnish with the fresh basil 7. Serve with a nice bottle of red wine and some crusty Italian bread. Hint: This is great doubled for a party. You can also add some cooked sweet peas and proscuitto for a different spin on this dish.
