Pineapple Rice

Add zing to your rice. This light, refreshing rice is a perfect pairing for summer dishes like my Grilled Hawaiian spam recipe. Also entered in this contest. 14 minutes 4 servings Ingredients 1 cup white Basmati rice long grain 2 cups vegetable broth 1/8 cup cilantro 1/8 fresh lime juice 2 slices pineapple chopped grilled slices optional Directions Using the Wolfgang Puck Bistro Rice Cooker and measuring cup Measure 1 cup basmati rice, put in rice cooker Use a regular measuring cup for 2 cups vegetable broth, pour in Turn rice cooker on approx 14 minutes Finely chop the cilantro and medium chop the pineapple slices When light indicator turns on, turn the rice cooker off and place rice in a bowl. Add the lime juice. Add the cilantro and pineapple. Mix and serve.
