What a great way to start a great day! Pumpkin fritters are just like donut holes, without all the rolling and rising. 30-35 minutes of plop time frying 3 1/2 - 4 1/2 fritters Ingredients ½ cup granulated sugar ¼ cup brown sugar 3 tablespoons butter, softened 3 large eggs ¾ cup canned pumpkin 1 teaspoon maple flavoring 4 cups all purpose flour ½ cup finely chopped pecans 3 ½ teaspoons baking powder 1 teaspoon salt ¾ teaspoon pumpkin pie spice 1/3 cup milk vegetable oil for deep fryer 1 1/2 cup powdered sugar Directions 1. In a large mixing bowl, cream together the sugars and butter until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the pumpkin and maple flavoring set aside. 2. Combine the flour, pecans, powder, salt and spice gradually add to the creamed mixture alternately with milk. Batter will be thick. 3. Heat oil in fryer to 375 degrees. Drop plop teaspoons of batter a few at a time into hot oil. Fry until golden brown on all sides. Drain on paper towels. Then, sprinkle well with powdered sugar. Place fritters in a pedestal serving bowl and ready to serve.
