An easy make-ahead receipe that can be made with leftovers. About 1 hour 6 to 8 Ingredients 1 frozen deep-dish pie crust 4 large eggs 8 oz. fat-free half-and-half 8 oz. grated 4-cheese mixture 4 oz. chopped fresh mushrooms any kind 4 oz. leftover or fresh brocolli Directions 1. Line the bottom of the pie crust with the cheese. 2. Add the mushroom and brocolli. 3. Whisk together the eggs and half-and-half and pour it over the mushrooms and brocolli. 4. Bake the quiche at approx. 400 degrees for about 15 minutes. 5. Turn the oven down to about 350 degrees and bake for another 35 to 45 minutes or until a knife inserted into the middle of the quiche comes out clean. 6. Serve hot or cool, refrigerate and serve the next day.
