Truly delicious Ratatoille with the added surprise ingredient of chick peas. Healthy, lowfat & yummy! 3 - 4 hours 6 Ingredients 1 large eggplant, chopped first slice, then quarter or eighth pieces, making a large bite size 2 bell peppers, chopped one yellow, one red 1 can, drained, Chickpeas 1 carton sliced baby bella mushrooms 1 28 oz can Crushed Tomatoes 1 4 oz can tomato sauce 3 tablespoons minced garlic 1/8 cup olive oil 1/2 onion, chopped 3 tablespoons of sugar salt to taste Directions Use a slow cooker. Layer everything in the following order: olive oil, garlic, onion, eggplant, chick peas, peppers, crushed tomatoes, mushrooms, tomato sauce. Sprinkle sugar and salt over the top of the tomato sauce. Cover an cook on low for 3 to 4 hours, until done. Best when served the next day lets all the flavors develop. Serve with rice or pasta.
