Salmon Benedict
 
Ingredients:
2- 3ounce portions salmon
4 eggs
2 english muffins-split
red lumpfish caviar
2-tbspn olive oil
salt/pepper
vinegar
 
Hollandaise
2 egg yolks
1/2 cup melted butter
dash lemon juice
 
Directions:
  1. Heat pan to medium, add olive oil.
  2. Salt and pepper the salmon, add to pan.
  3. Lightly brown each side (about a minute and a half each)..set aside and keep warm.
  4. For the eggs, heat and simmer water and add vinegar.
  5. Crack the eggs into a bowl, so they don't break, and slowly add eggs to water.  Cook for 2-3 minutes.
  6. For the hollandaise, whisk egg yolks in a bowl over a double boiler for about a minute.  Slowly add butter and continue to wisk vigorously.  Once it thickens, add a dash of lemon juice, and salt and pepper to taste.
  7. Toast and butter your english muffins.
  8. To assemble, place the salmon atop the english muffins, add eggs and hollandaise. Top it off with a little bit of the red caviar for Valentines day!
