Hearty flavorful vegetable side dish or vegetatian entre 15 minutes Six 6 servings Ingredients Pumpin or Bitternut squash Red Onion Garlic Cumin Olive Oil Salt White Pepper Directions Peel and thinly slice any winter or butternut squash into about 1 inch squares that are 1/8 inch thick. Thinly slice 2 Red Onions Mince 5 cloves of garlic Saute Squash, Onions and garlic in 4 tab. Olive oil After 7 minutes, sprinkle with Cumin, salt & papper. Toss and cover the pan for 5 minutes or until squash is tender.
