A tasty and pretty healthy breakfast entree. Complete it with a side of whole wheat toast and juice. 5 minutes 2 Ingredients 4 eggs 2 large ripe tomatoes 1 tbsp butter ground pepper, salt grated parmesan or asiago cheese chopped parsley optional Directions 1. Chop tomatoes. 2. Melt butter in skillet and then add chopped tomatoes. 3. Sautee tomatoes until very soft, gently mashing with fork or spatula, until most of the water has evaporated. Add salt and pepper if desired. 4. Add eggs, stirring into tomatoes until eggs are cooked but not dry. 5. Transfer to 2 plates, with buttered whole wheat toast on the side. Top with grated cheese. Serve.
