Eggplant Caviar
Makes about 1¼ cups
Ingredients
1¼ pounds eggplant, stem end removed
¼ cup extra virgin olive oil
3 cloves garlic, peeled
12 leaves fresh basil
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
Directions:
  1. Insert the thick slicing disc in the Cuisinart® Food Processor. Cut the eggplant to fit the large feed tube. Placing the eggplant into the feed tube, use gentle pressure to slice.
  2. Pour the olive oil into a large Cuisinart® Skillet and heat over medium low heat. Add the garlic and sauté it for about 3 minutes, stirring constantly, until it has browned.
  3. Add the sliced eggplant and basil leaves. Cook until the eggplant is softened and lightly browned, stirring often, about 8 to 10 minutes. Season with salt and pepper and let cool 5 minutes.
  4. Place the cooked eggplant in the Cuisinart® Food Processor and pulse to process, about 1 minute.
  5. Serve warm with a toasted bagel or pita chips.
