Shrimp Souvlaki

If you're starved for more exciting weeknight meals, dig into this one! This is a quick delicious and best of all, healthy, meal which is also perfect for serving a crowd! 5 mins. 4 Ingredients 1 c. grated seeded peeled cucumber 1 tsp. kosher salt 2/4 c. plain fat-free Greek yogurt 1 tbsp. red-wine vinegar 3 tbsp. chopped fresh mint 3 tsp. extra-virgin olive oil 2 ts. minced garlic 1 lb. peeled large shrimp 1/4 tsp. black pepper 4 6 in. whole-wheat pitas, warmed and split Directions 1. Spray the grill or broiler rack with nonstick spray and preheat. Mix the cucumber and 1/2 tsp. salt in a colander and let drain. For the sauce, mix the yogurt, vinegar, 1 tbsp. mint, 1 tsp. oil, and 1 tsp. garlic in a bowl. Set aside. 2. Combine the shrimp, pepper and the remaining salt, mint, oil and garlic. Thread the shrimp on 4 10 in. skewers. Grill or broil just until opaque in the center turning occasionally 5-6 minutes. 3. Squeeze the cucumber dry stir into the sauce. Serve each pita with one quarter of the shrimp, about 1/3 cup of the sauce and an optional Greek salad.
